Palate

It's soft-textured and surprisingly juicy in character, with racy acidity motivating its ripe wild berry fruits. Tart citrus adds cheek-pinching tension toward the close. That finishes amazingly fresh yet pleasantly tart, leaving the mouth watering for more as blood orange and exotic spices swirl throughout.

Growing Conditions

Aldo Viola is a small, family-run estate in western Sicily rooted in organic farming and minimal- intervention winemaking long before it became fashionable. The winery focuses on native Sicilian varieties, farming old vines with a strong emphasis on balance, transparency, and site expression rather than power.

Winemaking

Saignée is Aldo Viola's latest experiment, a light, rustic red reminiscent of the fine wines of yesteryear, with light maceration and rapid fermentation. It's a fresh, drinkable wine that transports you to the past.

100% fermented grapes! The wines are the fruit of passion, designed to be free from any standardization. The unpredictability of spontaneous fermentations and the purity of the grape juice, free from any added or subtracted substances, creates a magical experience, reflecting the exaltation of a highly suited terroir.

Aldo ferments it in steel with a week-long maceration, then ages it for a year in large Slavonian oak casks, bottling it with a miniscule dose of sulfur.
