Growing Conditions
The grapes come from the Racalmare district in Grotte at an altitude of about 440 meters s.l.m. The soil, rich in organic substance, has a calcareous / clayey structure and a typical pebbly skeleton.

Harvest
Between the second and third week of September. The grapes are harvested during the coolest hours of the day. The grapes are selected and picked by hand and placed in boxes.
Winemaking
Immediately after harvesting, the grapes are immediately destemmed and macerated at a temperature of 22-24 ° C for 10-12 days.
After the natural malolactic fermentation, the maturation continues in stainless steel tanks before bottling.
Aging
Aging in bottle for a period of 3 / 4months before marketing.

Intense ruby red with violet reflections.
