Nose
The nose opens with fresh fruity and floral scents reminiscent of tropical fruit, white peach, and cut hay with subtle balsamic hints of sage.
Palate
In the mouth it releases a great freshness with a crispy bubble that tickles the palate. The flavor perfectly balances the residual sugar and the mineral finish gives length and a pleasant closure that refers to the scents perceived by the nose.

- TRAINING SYSTEM / Espalier, with a density of 4.500 stumps per hectare.

Harvest
The grapes are harvested by hand in the morning to facilitate the conservation of the delicate varietal aromas.
Winemaking
- CLASSIFICATION / Extra dry white spumante
- GRAPE VARIETY / Cuvée of white grapes.
In the cellar we proceed with a destemming-crushing and a short skin maceration at 8° C. Then we proceed to a soft pressing and, after cold decanting, the alcoholic fermentation starts at controlled temperature. At the end of this phase, the sparkling base is left to mature for several weeks in contact with the fine lees and is subjected to frequent batonnage. The second fermentation is carried out in an autoclave with a “long” Charmat.
Aging
The wine comes subsequently bottled and aged in bottle for about sixty days before marketing.
Appearance
It has a beautiful bright straw yellow color amplified by a subtle perlage and by the characteristic “bubble chains” that copiously develop in the glass.
Food Pairing
Eclectic wine that can be happily combined with seafood and shellfish, or with the traditional Sicilian rotisserie.
