VERTICAL TRELLIS TRAINING AND GUYOT PRUNING ALLOW GUIDING THE GROWTH OF THE PLANTS AND CONTROLLING THE GRAPES QUALITY.

Harvest

Settesoli Collezione Grillo-Chardonnay comes from the selection of our best Grillo and Chardonnay grapes. Grapes are harvested in different periods: at the beginning of August the Chardonnay, between the last week of August and the first 10 days of September the Grillo.

- GRILLO HARVEST TAKES PLACE FROM LATE AUGUST TO THE FIRST WEEK OF SEPTEMBER

- CHARDONNAY HARVEST TAKES PLACE AT THE BEGINNING OF AUGUST.

Winemaking

FERMENTATION TAKES PLACE IN STEEL TANKS AT CONTROLLED TEMPERATURE. AGEING IN STEEL TANKS AND THEN IN BOTTLES FOR AT LEAST 4 MONTHS.

Appearance

Intense, like the colour of our ceramics.

Food Pairing

Excellent with raw fish, pasta with clams or seafood. Pair it with Clams, botargo and lemon linguine.
