Nose

Juicy red fruit, notes of meat, spicy. Aromatic herbs, tobacco and spices predominate, together with a typical pleasant tenacity.

Palate

On the palate it is striking for its acidity and marked minerality typical of the volcanic terroir. A long, delicious finish.

Growing Conditions

The vines, between 20 and 30 years old, come from some of the best terroirs on the volcano: the North Slope of Mount Etna, in the Zottorinoto and Puntale Palino contrada of Solicchiata, a hamlet of Castiglione di Sicilia, at 950 meters (3116 feet) altitude and on sandy volcanic soils.

The choice to produce organically is an effective choice for the well-being of each individual but also for the planet, the sustainable choice is a direct vote for the health and hope of generations to come. Our main objective is not to achieve high levels of production, but to maintain and increase the levels of organic substance in the soil (organic farming), reducing or completely eliminating the supply of fertilizers, herbicides and pesticides for fight parasites (insects, mites, etc.) and pathogens (fungi, bacteria, viruses).

Harvest

The slope of the land exceeding 30% prevents mechanization, consequently the work in the vineyard and the harvesting of the grapes are carried out manually using methods linked to the old winemakers; our grapes are carefully selected and transported in wooden boxes.

Winemaking

Organic, Sustainable, Vegan

This wine, made from 100% old-vine Nerello Mascalese, is from a family that has owned vineyards and made wine on Etna since 1860. Brother and sister winemaking team Giacomo and Flavia Rallo have taken the lead in continuing the tradition of making organic, natural wines to best showcase their family's vineyards.

They are treated Organically, hand-harvested, wild yeast fermented in stainless steel, then aged 12 months in used Slavonian oak. Once bottled lightly fined and lightly filtered, with a drop of SO2, they age another 12 months in bottle. This is the epitome of Mount Etna, with smoky dark juicy fruit, notes of meat, spicy, with a long, delicious finish.
