Growing Conditions

Vineyards in the townships of Randazzo and Castiglione di Sicilia (Catania). Wine is produced from the young vines in all the vineyards of the estate which range from 5 to 50 years. The vineyards inhabit the northern slope of Mount Etna, from 600 up to 900 meters with volcanic soils. Vines are en goblet and modified en goblet pruned.

Harvest

Harvested in the first and second weeks of October.

Winemaking

Temperature controlled fermentation (25-28° C) with spontaneous malolactic fermentation.

Aging

Aging in large French oak barrels (10-30 hl) for 16 months and an additional 1 month in stainless steel.
