Winemaking

The sparkling Caleno is obtained from the low temperature fermentation of the must deriving from the soft pressing of the whole grapes. The foaming takes place in an autoclave at a temperature of about 15 ° C for a period of two months. The foaming derives exclusively from the natural sugars of the grapes.

- Vinification technique: In white and subsequent alcoholic fermentation at a controlled temperature.
