Winemaking
This product is obtained from a careful selection of Nerello Mascalese grapes planted on Etna at 800 meters above sea level, with a gentle pressing. After an initial fermentation, the wine is bottled for a second fermentation. It then matures in the dark at a temperature of 15 degrees Celsius for over 48 months “sur lies” (on yeast remains). The “remuages sur les pupitres” accompanies aging until the bottle is placed upside down for disgorgement of the sediment, and 6 - 9 months after disgorgement, a fine perlage (stream of bubbles) frees itself in the wine glass.
