Growing Conditions

Cultivation area: Valle del Belice - Sicilia Occidentale

Harvest

Selection of excellent Catarratto grapes harvested in boxes on reaching optimal ripeness.

Winemaking

Transfer to the cellar in the first cool hours of the day, soft pressing, cooling of the crushed grapes and sending to soft presses, decanting and subsequent fermentation in steel at controlled temperature with the addition of selected yeasts. The parking of the wine on the noble lees lasts for a few months.

Aging

The storage takes place at a controlled temperature, to maintain the freshness of the aromas unchanged, for about 5 months until bottling.

Appearance

Straw yellow with greenish reflections.

Food Pairing

Excellent with fish dishes, soft and spun cheeses.
