Harvest

Zibibbo grapes are harvested by hand between the end of August and the first week of September

- YIELD: 75 q.li/ha

Winemaking

The grapes arrived in the cellar are de-stemmed and crushed, then undergo a maceration in the soft press at low temperature for about 8 hours. Subsequently the fermentation takes place in steel tanks at temperatures of 14-16 °C. The wine obtained remains until bottling in steel tanks and then completes its maturation for another 40 days in bottle

Aging

In stainless steel tank from the end of the fermentation and in bottle under controlled temperature

Appearance

Yellow color with clear green reflections, the Zibibbo expresses the liveliness of Sicily.
