- Training and pruning: Upwards-trained vertical trellis, guyot
- Yield per hectare: 9000 kg per hectare

Winemaking

Born from the knowledge and experience of our expert winemakers, sofe’ is the fruit of a careful selection of grapes.

Maceration occurs in 15-18 days to about 26 c° with daily pump-overs.

Aging

After racking, it is aged in french oak wood.

Perfect in combination with meat dishes: fresh busiate with pumpkin cream and peppered sausage. Created to enliven cold winter days, this wine affords enthralling notes of wisdom.
