Growing Conditions

The Zottorinotto contrada is situated in the Northen slopes of mount Etna.

The grapes are harvested by hand.

- YIELD PER HECTARE: 60 quintals

- HARVEST PERIOD: 2th dacade of October


Harvested in small crates and quickly brought to the winery where they are manually selected on a belt-conveyor. Destemmed and slightly crushed, they are sent to the press where they are gently pressed. The must obtained is left to ferment without any temperature checking in wooden barrels of 225 liters. After the fermentation the wine obtained rests on the lees for about 8 months.


About 8 months in barrique of acacia wood and 6 months in bottle.
