Nose

The bouquet is fruity with scents of yellow pulp ripe fruits.

Palate

Good structure, well-balanced with an intense fruity aftertaste.

Winemaking

Obtained from Grillo grapes, a characteristic Sicilian variety. Grapes are destemmed and then gently pressed by a pneumatic press. The must is chilled to allow a cold settling in order to clarify the juice before adding selected yeast. Fermentation takes place in stainless steel tanks at a controlled temperature of 16-18°C. When the fermentation is completed, after a short stay on its fine lees, the wine is filtered and then bottled.

Appearance

The colour is straw-yellow with gold reflections.

Food Pairing

This wine is perfect to pair with fish dishes like pasta with seafood or with aubergine dishes. The ideal serving temperature is 8-10°C.
