Nose

Very elegant with hints of broom fl owers,
pear and tropical fruit, together with a spicy
notes of vanilla, cinnamon and white pepper.
With hints of broom fl owers, cantaloupe and
exotic fruit.

Palate

Rich and deep, with delicate sweetish and
spicy notes at the end

Harvest

The best bunches of Insolia from limestone-rich vineyards 350 metres above sea level, are harvested in the first light of dawn in the fi rst week of September and kept in refrigerated cells for 3 days, in order to keep intact the entire aromatic spectrum of the vine.

Winemaking

The grapes are pressed very softly at low temperature (4°C/39°F). The 50% must underwent temperature-controlled fermentation in stainless
steel tanks, and the remaining 50% in 25hl
barrels staying on its lees until April.

Aging

It then
matured for several months in bottle.

Appearance

A bright golden straw-yellow, with faint greenish highlights.

Food Pairing

Perfect with green cheese and pasta dishes,
with fi sh or white meats.
