Growing Conditions
Softly rolling hillside vineyards surround the old family farmhouse 'Miccina' located in the small DOC of Contessa Entellina (Palermo). The Nerello Mascalese vines are planted on calcareous clay with volcanic tuff with an elevation of around 1,150 ft. The south-east 'sirocco' wind is typical to the area, which blows from the Sahara in May and June.

Winemaking
Hand harvested during the early morning or evening, the grapes are destemmed, then pass through a cooling unit to bring down the temperature before pressing. Soft pressed on the skins for 3 hours, then fermented in stainless steel tank.
Organic winemaking and vegan friendly.
Nerello Mascalese was introduced to Sambuca di Sicilia by winery founder Aurelio Di Giovanna in 1968. The Di Giovanna family has been cultivating this Sicilian variety for over 50 years.
Aging
Fine lees ageing in stainless steel tank for 6 months before bottling.
