Ru ful ia/ rufu 'l:ia / Sicilian for 'a gust of wind'
Catarratto Bianco Lucido vines grow at 2,130 ft. in the San Giacomo vineyard, just below the family wine cellar. The soil is calcareous, marl, perfectly suited the the varietal. Catarratto is one of the historical varieties of the territory, cultivated by the family for 5 generations.
The vineyard is characterized by its high altitude and the extreme day to night temperature fluctuations, thanks to the 'tramontana' cooling north wind.
August 26th
At 10 g. of residual sugar, the wine is bottled. Estate bottled.
Hand harvested by evening, the grapes are quickly brought into the wine cellar, destemmed, cooled and then soft pressed. The first press juice begins fermentation spontaneously, without added sulphites.
Fermentation completes in the bottle with a final pressure of 2.0 bars. Aged in bottle for 9 months before release.
