Growing Conditions
Grillo Biotype A clone is planted on the high hillsides of the estate vineyard 'Paradiso', located in the small DOC of Contessa Entellina (Palermo) about 30 km from the Mediterranean coastline. The soil is calcareous with tuff. As with other native varieties, Grillo is very productive and benefits from attentive vineyard management with lowered yields and organic farming.
The area is noted for its many winds, each with its own name. The most influential is the strong 'scirocco' wind in the Spring, that brings rain with sand from the Sahara desert.

Winemaking
Di Giovanna’s Vurria Grillo is a vibrant and fragrant Sicilian white wine. The grape is a cross between two native varieties, Catarratto and Moscato d’Alessandria. Today, Grillo is one of the most interesting native white grapes of the western Sicilian landscape.
Vinification in steel enhances its characteristic notes of citrus, tropical fruit and its pleasant freshness.
The de-stemmed grapes are cooled, soft pressed followed by spontaneous fermentation in steel tanks.

Aging
Aged in stainless steel tank on the fine lees for 6 months.
