Growing Conditions

The grapes come from the estate of Salemi, located at an altitude of 150 meters above the sea level. The soil, rich in organic substances, has a clay structure.

The grapes are harvested in advance at the end of August, in the coolest hours of the day.

The grapes are vinified in “white” with a very short maceration on the skins (about 2/3 hours) and soft pressing. The fermentation continues in steel tanks maintained at a constant temperature about 15° C. After fermentation the wine is decanted in order to remove the gross lees and to preserve the aromatic compounds. Then it is maturated in steel tanks maintained at a constant temperature, afterwards it is shortly aged in the bottle.
