The sun, the heat and the constant winds that mitigate the temperatures by drying the night humidity brought by the sea, together with the generosity of the red soil, make this terroir the ideal place to grow these typical island varieties characterized by strong notes, richness in aroma and sugar.

Winemaking
Destemming, maceration and fermentation at controlled temperature of 20-25C° in stainless steel vats for approx. 7 days with frequent delestages. When all the sugars are developed, skin maceration continues for another 7 days for optimal tannin extraction, very important for the ageing process. Fortification is done adding alcohol up to 18% followed by mistella and cooked must.
Aging
Ageing in Slavonian casks, French and American barriques and tonneaux.

Surprising with savoury aperitifs like aged pecorino and fig jam, or Sicilian swordfish rolls or with the more classic marzipan cakes or dark chocolate desserts.
