Growing Conditions

Made with 100% Grillo grapes cultivated at 830 meters above sea level, the highest elevation in Sicily. It expresses the unique terroir of ancient marine sediment and the intense Sicilian sun.

Winemaking

Helios, the greek god of sun, is named after the winery's founder Aurelio Di Giovanna and made by hand from harvest to bottling.

Soft pressed for 8 hours, fermentation French tonneaux and stainless steel.

Aging

90% for 9 months on the fine lees in stainless steel & 10% in French tonneaux.

Appearance

Bright yellow.

Try with sushi and sashimi. Pair with rich fish dishes, roasted white meats and winter vegetables.
