Growing Conditions

Organically cultivated Nero d'Avola grapes grow on the estate vineyard 'Paradiso' in the small DOC of Contessa Entellina (Palermo). High hillside vineyards, at 1,500 ft., express the elegance and aromatic complexity of Nero d'Avola.

Winemaking

Hand-harvested grapes are de-stemmed. Spontaneous fermentation in stainless steel tank. Soft-pressing after 8 days on the skins.

Certified organic winemaking & vegan friendly.

Aging

Aged for 18 months in stainless steel tank. 50% aged in 500 l. French oak barrels for 6 months.

Intense ruby red

Pair with tomato sauce based pasta dishes. Try with eggplant caponata, grilled vegetables or pork.
