Nose
The notes of rose and candied violet are typical, with a elegant smokey tone.
Palate
In the mouth much red fruit with balsamic tones. A silky red is light- to medium-bodied wine. Pure cherry and raspberry fruit flavors, followed by hints of loamy earth and light herbs on the finish.
Growing Conditions
This is a rare and exclusive variety cultivated in only a few hectares in the whole of Sicily, which reaches its ultimate expression in the red sands of Vittoria, not far from the sea.
The principal characteristic of this land is the appearance of its red sand; the name of Cerasuolo derives from it, evoking the ‘cerasa’, cherry in Sicilian. Here, between the plateau and the sea, where the summer temperatures are very high and the rainfall very low, the vines are interwoven with the ecosystem of the Mediterranean macchia.

Winemaking
An aromatic and pleasing red wine as are few others, the perfect synthesis between tradition and new trends.
Destalking followed by 7 days lying on the skins, after a particularly soft pressing with the basket press (vertical press), malolactic fermentation in stainless steel vats, where it matures until bottling.
Appearance
Ruby red with mauve reflections.
Food Pairing
The extraordinary versatility of this Sicilian Claret shows itself in the classics of everyday, such as with pasta dishes like rigatoni, spaghetti and lasagna. Its adaptable nature extends to contemporary food; it is ideal with cheeseburgers. Hypnotic with fresh soft cheese, and in dressing up with a mushroom and onion soup.
