From the beginning of September to the last ten days of the month, depending each year on the ripening of the grapes.

Cold maceration of the grapes, extremely soft pressing with membrane press, followed by static clarification of the must and fermentation at controlled temperatures (18/20°C) in steel tanks. About halfway through fermentation the must is transferred into large wooden barrels where it remains to age on the lees.

8/10 months of refinement in “sur lies” through batonnage, then in bottle for at least 6/8 months.
